Tuesdays are our days for exploring the West side of the suburbs and these past two weeks we’ve come back to the town of Riverside. Its fascinating with its completely curvy streets and when you look on a map it reminds Anya of paint by number. It would be fun to bike a fun pattern there sometime! So far we only managed one Strava doodle. (Link here).
This week is a call week for Anya, so in addition to not being able to go too far from the hospital, she occasionally has to spend the night there (in the operating room). Monday into Tuesday was like that, so the adventures were a bit abbreviated in favor of getting something delicious to eat and getting some paint samples to pick a bathroom color.
After the VA we drove over to Empanadus (see prior post) which continues to get better and better! We had all their vegan empanadas and Bryce sampled the Al Pastor and bean and potato one. We had the apple version for dessert.
At the end of the night, we chatted with the empanada guys as they were cutting up 15 pounds of onions. Definitely they should have a flavor of the month and we made several possible suggestions. The owners are expanding and hoping to have a shop in each of the 50 states…so you might be able to sample them soon (otherwise a trip to Riverside is more than worth it!)
